Salmon: 4 pcs

Cherry tomatoes: 350 grams

Mushrooms: One cup

Green capsicum: 1 piece

Zucchini: 1 piece (large size)

Lemon juice: one tablespoon

Olive Oil: One tablespoon

Black pepper: A pinch

Salt: One teaspoon

Garlic: 1 tbsp (minced)

Rosemary: 1 tablespoon (dried)

Basil: 1 tablespoon (dried)

How to make

Mix salt, pepper, basil, garlic, rosemary and lemon juice in a bowl. Get a large baking tray lined with butter paper, arrange the fish pieces on the tray, then cover the fish pieces with the spice mixture on both sides. Dice the tomatoes, bell peppers, mushrooms and zucchini. Preheat the oven to 200 degrees Celsius. Sprinkle the vegetables with a little salt, pepper and oil as desired. Bake the tray in the oven for 30 minutes, until the fish is tender. Remove the tray from the oven and transfer to a serving dish and serve hot.
